Der Betrieb wird als AG geführt (Domaine de Roveray SA). Bei Pachtantritt werden sämtliche Aktien gekauft und damit das gesamte Pächterinventar samt Pflanzgut. Die Gebäude und das Land werden mittels Pachtvertrags zur Verfügung gestellt.
